Granola smoothie
Like a yogurt bowl, in smoothie form!
I really love this smoothie! It was initially my way to use up endless quantities of granola after testing and perfecting my recipe for brown butter granola but now that I’ve gone through it all, I make it because I love it!
Think of it as a yogurt bowl, but in smoothie form, with a base of plain greek yogurt, a compote of some sort (you could use jam or preserves too), nutty granola, strawberries and vanilla with coconut water on the side. I like to blend it with tons of coconut water (mainly because I love it, especially in a smoothie!) because it levels out the creaminess from the yogurt and takes it more into a ~pinkberry~ territory.
For anyone curious about the texture, the granola is blended all the way through, so I would describe it as a gentle ~granola essence~ which just means it adds a warmness and depth to the smoothie which contrasts the frozen fruit! Picture the warm comfort of fresh granola with cinnamon, vanilla, oats, nuts, maple… those elements make the smoothie just a little heartier.
I haven’t tried it using granola that has dried fruit in it, it’s just not my thing! I would guess this smoothie is better made with a vanilla-nutty granola, something like the Trader Joe’s Vanilla Almond Clusters granola, because I feel like the dried fruit may not blend all the way through. I could be wrong though, let me know if you try it!
